Asahikawa ramen starts with a “double soup” of pork and chicken stock plus dried sardine and kelp stock, under a layer of lard that keeps it from cooling quickly. Soy sauce is the standard, with medium-thin wavy noodles.[8][24]
Since August 1996 the Ramen Village has gathered eight counters in one place: among them Aoba (founded 1947), Baikohken, Tenkin and Santōka, plus a guest slot that rotates between well-known shops from around Japan. Together they seat 220.[25][26]
Asahikawa ramen is part of the Hokkaido Heritage listing “Hokkaido ramen”.[9]
